Roast Beef

Ingredients:

Prime Rib, at least 3-5 kilos (say at least 3 ribs), meat should be well marbled (i.e., lines of fat going through meat) and there should be fat on the top of the prime rib
Caraway seeds
3-4 onions, quartered
Flour

Preparation:
  1. Preheat oven to 325F
  2. Sprinkle flour all over the roast, giving it an even, but light coating
  3. Place roast fat-side up (rib-side down) in a roasting pan on a grill so that the roast is not resting directly on the bottom
  4. Sprinkle with caraway seeds
  5. Place onions in roasting pan
  6. Plan to roast for about 20-25 minutes / pound (or until the internal temperature reaches 145F for medium rare, 160F for medium)
  7. When done, remove from oven, cover with tinfoil and let sit for at least 15 minutes (use this time to cook the Yorkshire Pudding)
